coffee cake

I got this recipe from a friend. Sorry for the tilted picture.

For rich flavour of coffee, I used instant coffee in two tsp of water.

I made a green tea mint cake along with coffee cake. I used green tea mint powder.img_7361img_7360




2 cups all-purpose flour
1 teaspoon salt

1 teaspoon sugar
2 sticks chilled unsalted butter, cut into pieces

1.To make the dough for the pie crust, mix 2 cups all-purpose flour and 1 teaspoon each salt and sugar in a medium-size bowl. Cut 1 and 1/2 sticks chilled unsalted butter into pieces. With a pastry blender, cut in butter, working until mixture resembles coarse meal.
2.Add 4 tablespoons ice water; work with hands until dough comes together. If dough is still crumbly, add more ice water a tablespoon at a time (up to 4 more tablespoons). Do not overwork.
3.Divide dough in half, and flatten halves into disks. Wrap disks separately in plastic; refrigerate at least 1 hour.
4.To form the pie shell, roll the dough on a floured surface into a 14-inch round. Wrap around rolling pin and carefully unroll over a 9-inch pie plate.
5.Fit gently into bottom and side of plate. Use kitchen shears to trim dough to a 1-inch overhang; fold under, and seal to form a rim.
6.Crimp rim with fingertips and knuckle. Repeat with remaining dough; wrap each with plastic, stack, and freeze.




12 Granny Smith apples, peeled, cored, and sliced
3/4 cup sugar, plus additional for pie top
Zest and juice of 1 lemon
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch ground cloves
2 tablespoons unsalted butter
1 large egg, beaten


1.Heat oven to 180 C degrees. On a lightly floured surface, roll out pate brisee to a diameter slightly larger than plate. Press one pastry circle into the pie plate. Place the other circle on waxed paper, and cover with plastic wrap. Chill all pastry until firm, about 30 minutes.
2.In a large bowl, combine apples, sugar, lemon zest and juice, spices, and flour. Toss well. Spoon apples into pie pan. Dot with butter, and cover with remaining pastry circle. Cut several steam vents across top. Seal by crimping edges as desired. Brush with beaten egg, and sprinkle with additional sugar.
3.Bake until crust is brown and juices are bubbling, about 1 hour. Let cool on wire rack before serving.

Every now and then, we deserve to have a lazy Sunday morning to refuel ourselves. Nevertheless, you do crave for hunger satisfying morning meal too.

I wanted to early start my slothful Sunday with something sweet as an incentive.

I found the ripened bananas on the dinner table and decided to put use of them and there came my Lazy Morning Muffins.

Prep time: 10 Minutes

Cooking Time: 18-22 Minutes (You can see an episode of The Big Bang Theory )


1 cup – All purpose Flour

½ Cup – Whole wheat flour or Multi Grain Flour (I used Whole wheat)

½ Cup – Oil (any cooking oil is fine, If you feel it’s too much oil, you can use 50% yogurt and 50% Oil.I wanted a vegan version, so i used oil.)

½ Cup – Sugar (Fine or Granulated)

2 – Ripened long bananas

¼ Cup – Walnuts
